Electrolux Professional at the royal court of Alain Ducasse
Electrolux Professional and Molteni were chosen to equip the 4 kitchens of the first Alain Ducasse training center in Argenteuil, close to Paris (France).
This is the most famous training center in the world, directed by Alain Ducasse; it consists of 300 square meters dedicated exclusively to Chefs who want to improve their existing skills or to develop new cooking techniques, from the most traditional (cast iron cocotte, rotisserie…) to the most untypical (griddle, wok cooking, induction, vacuum packing…), thanks to the use of state-of-the-art equipment.
Among the installed equipments there are several air-o-steam 6 grids combi ovens (both in free standing configuration or together with the air-o-chill chiller - cook&chill tower), some thermaline central blocks, which include the most advanced cooking functions such as the induction large surface tops and the ecotops, a few thermaline braising pans. To complete the Electrolux Professional package some static preparation equipment with unique tops, to meet the highest hygiene standards, and several dynamic preparation appliances.
This Chef’s paradise could not come short of three Molteni stoves: made-to-measure blocks realized following the desires of the Executive Chef Alain Ducasse.
