The famous chef Massimo Spigaroli says: “The first time I went to Bocuse, I was only 16 years old. Upon entering, I was immediately attracted by the red, shiny, central Molteni stove”.
A dream that became reality with the opening of his restaurant inside the historic “Corte Pallavicina”, a beautiful Relais positioned amongst the cities of Parma, Piacenza and Cremona, also very famous to be the home of the "Culatello" (cured pork meat).
In the kitchen of “Corte Pallavicina”, entirely realized by Electrolux Professional, stands a glittering green Molteni central stove.
“My goal was to have an important kitchen, functional and well-organized where everyone could work in their own spaces, with refrigerators, working top and with the most modern technologies. I make it possible it thanks to Electrolux Professional and Molteni” said Chef Spigaroli
The central made-to-measure Molteni block, antique green enamelled finishing with brass trims, is equipped with all cooking functions: from the traditional solid top for copper utensils, to the technologic and modern induction plate (total surface), up to the classic pasta cooker. While, underneath the block, there are a pass-through static oven, neutral cupboards and hot drawers to keep food hot.

To complete the Electrolux Professional package: a green ventilation hood with brass trims and 2 combi ovens, one for meat and one for pastry. Looking at the made-to-measure preparation equipment, realized following the aesthetics of the Molteni stove, great attention was given mainly to the work tables made with 15/10 thick tops, with rounded edges.
The long experience of Massimo Spigaroli together with the project know-how by Electrolux Professional, drove the creation of the ideal environment, in which each space is designed to optimize the work of the different operators. This beautiful installation is often used for outdoor sessions also by students of Alma, the International Italian Culinary School of Colorno (PR).
