The chef and seven cooks working in the 675 square meters kitchen of the Organizzazione sociopsichiatrica cantonale in Mendrisio, Switzerland, rely on ELECTROLUX PROFESSIONAL products and fresh ingredients to daily put 1250 meals on the table for patients and employees.
It took only twelve months to erect the building where the new kitchen of the Organizzazione sociopsichiatrica cantonale (OSC) in Mendrisio, Switzerland is located. ELECTROLUX PROFESSIONAL in Switzerland working along specialized planner for professional kitchens Gastro Concept and Design AG in Hergiswil completed this significant project.
The 675 square meters OSC kitchen is remarkable in various aspects. A total of 1250 meals are served daily to patients and employees, 250 at breakfast, 550 at lunch and 450 at dinnertime. Quantity does not reduce quality. Great importance is given to food quality and mainly fresh ingredients are used for preparing the meals. Another significant aspect is that patients are included in the food preparation as an occupational therapy.
This large-scale kitchen is divided in five different working areas: preparation, cold kitchen, production (Cook & Chill), regeneration and dishwashing as well as six freezer and cold storage rooms.
Four combi-steamers, two blast chillers/freezers from Electrolux AIR-O-SYSTEM®, two pressure steamers, two kettles, one pressure braising pan, one pot & pan washer and one rack type dishwasher together with an Electrolux THERMALINE C90 cooking range are the perfect working equipment for the chef, seven cooks and eight kitchen assistants.
